This year, the Mid-Autumn Festival will fall on September 21st. Have you prepared your mooncake yet? I used to buy them, but now I prefer to bake them myself since it’s not difficult and we can actually choose our preferred ingredients.
This time I baked some Teochew Mooncakes with white lotus and salted egg yolks filling. I love the flaky textures of this type of mooncake so much. It feels lighter than the traditional mooncakes.
For the salted egg yolks, I prefer to use the fresh salted duck eggs instead of the store-bought ready-to-use ones which tend to be a bit dry and the shapes are not so round. For mine, I use Dasoon Salted Duck Eggs. The yolks are big, round, and tastes yummy! 🥰
Since I love to eat cute stuffs, I make my Teochew Mooncakes into Panda (remember that Kai2 and Jia2 just had a baby panda? 🥰) and Bear (my hubby’s favorite animal) shapes.
