Streusel Chocolate-Macadamia Banana Bread for our tea time later.

The crumbly streusel topping totally improves the look and flavor of a simple homemade banana bread. Gotta try to believe it 😉.

For this banana bread, I experimented by adding some espresso (liquid) to accentuate the rich flavor of the chocolate from the cocoa powder. Indeed, it created layers of flavor on my banana bread.

Chocolate-Macadamia Banana Bread
3 ripe bananas, mashed
1/3 cup unsalted butter, melted
1/2 cup brown sugar
1 egg, beaten
1 tsp vanilla extract
1 tsp baking soda
1 1/2 cups plain flour
Pinch of salt
1 1/2 tbsp Artisan Black Cocoa Powder dezaancocoa_asia
50 ml espresso
10 pcs Dark chocolate couverture (I use valrhona_asia Caraibe 66%)
10 pcs Macadamia nuts, crushed

Method:
1. Mix all wet ingredients with a whisk.
2. Mix all dry ingredients with a spatula.
3. Combine all with a whisk (do not over mix).
4. Pour into a baking pan
5. Add the streusel topping on top.
6. Bake on a preheated oven at 175°C for about 50 minutes.

Streusel Topping
1/3 cup caster sugar
1/2 cup plain flour
3/4 tsp ground cinnamon
1/4 cup unsalted butter, cubed
Pinch of sea salt
1 tsp Artisan Black Cocoa Powder dezaancocoa_asia

Method:
Combine all using your fingers till you get a sand-like texture
