My Focaccia Floral Bouquet, before and after baking 💐.

I used some edible flowers and brussel sprout petals for the decoration.

FOCACCIA
Infusion:
1/3 cup olive oil
2 garlic cloves
1 Tbsp fresh thymes ( or 1 t of dried thyme)
1 Tbsp fresh rosemary (or 1 t of dried rosemary)
1/4 tsp black pepper
Dough:
1 cup warm water
2 1/4 tsp yeast (7 gr)
1/4 tsp honey
2 1/2 cups bread or plain flour
1 tsp sea salt

Topping:
Himalayan Pink Salt

Method:
1. In a saucepan, combine olive oil , garlic, herbs and black pepper. Stir it on low heat until aromatic (don’t let the garlic turn brown)
2. Combine warm water, honey, and yeast, and leave it for 5 mins.
3. Add 1 cup of flour + 1/4 cup of infused olive oil to yeast mixture and sit again for another 5 mins.
4. Pour the remaining of flour (1 1/2 cups) + salt to the mixture and start kneading it until smooth (about 10 mins). Let it rest for 1 hour.
5. Preheat the oven to 220 degree celsius.
6. Brush the baking pan with some infused oil evenly.
7. Punch the dough to let air out and transfer it to the pan.
8. Using your fingers, make dimples on the whole surface of the dough.
9. Pour the remaining infused oil onto the dough and brush it evenly. Place the toppings or the decoration. Sprinkle with some salt.
10. Let is rise again for about 20-30 minutes.
11. Bake it at 200 degree celsius for about 20-30 minutes or until it’s golden brown.
