Had fun today joining the Livestream show with redmartbylazada and helloyoripe. So happy to meet some of my IG friends wendeats vincas_kitchen and popozwen 🥰.

I prepared Rice Pudding with Pistachio Crunch and Cranberries, using 10 Ingredients:
1 tbsp SongHe Alchemy Fibre for Rice
1 cup Redmart Jasmine Fragrant Rice
Water to cook rice
3 cups Redmart 100% Fresh Milk
1/4 cup Redmart Fine Grain Sugar
1/4 tsp salt
1 pc Redmart Cinnamon Stick
1 1/2 tsp Redmart Pure Vanilla Extract
1 tbsp unsalted butter

Pistachio crunch:
1 cup Redmart Natural Baked Pistachio
1/2 cup Redmart Fine Grain Sugar
1/2 cup Water
1 pc Redmart Cinnamon Stick
1 tsp Redmart Pure Vanilla Extract
Additional topping:
Redmart Cranberries

Method:
Rice Pudding
1. Wash the rice, place in a rice cooker.
2. Add the alchemy fibre, then pour the water according to the regular measurement, then cook as per normal.
3. Place 3 cups of cooked rice in a saucepan and add 3 cups of milk.
4. Add the sugar, salt, vanilla extract and a cinnamon stick.
5. Bring to a simmer while stirring frequently for about 12 minutes.
6. Add some butter and stir until all butter melting.
7. Transfer it to a bowl.

Pistachio crunch
1. Mix sugar + water + cinnamon and cook over medium heat until the sugar dissolves and thicken.
2. Remove from heat and add pistachio and vanilla.
3. Cook over low heat and stir until all pistachios are coated in a thick syrup.
4. Transfer the nuts to a baking paper, let them cool down before separate them.
Assembly
Sprinkle some pistachio crunch and cranberries on top of the rice pudding.
Serve warm or cold.
